Slow Cooked Lamb Shanks Recipe

A recipe from our chef mates Nathan and Eileen Booth at Burnt Ends Smoking Co. It's one of our favourite spots in Margaret River so we were thrilled when they agreed to create some homestyle recipes to go with our Marybrook Premium Produce lamb boxes.


Serves 4




Ingredients


50 ml olive oil

4 x lamb shanks

1 leek trimmed and sliced

1 brown onion sliced

100 g cherry tomato

1 carrot peeled and sliced

6 cloves garlic

6 sprigs thyme

6 sprigs rosemary

½ cup plain flour

2 tbsp smoked paprika

1 tbsp salt

125 g butter cubed

250 ml red wine

250 ml passata

250 ml chicken stock

8 royal blue potatoes peeled

125 g butter

100 ml cream

2 tsp salt

1 bunch baby carrots

1 tbsp honey



Method


Preheat oven to 170degrees.


Heat oil in a large frying pan over high heat. Mix flour, salt and smoked paprika together.


Dust lamb shanks in flour and reserve remaining flour. Cook shanks in batches for 1-2 minutes each side or until browned. Remove from frying pan and place in baking dish. Set aside.


Add leeks, onion, garlic and carrot to the pan and cook for 2-3minutes. Deglaze pan with red wine and add thyme, rosemary, passata, chicken stock and cherry tomatoes. Bring to a boil.


Pour over shanks and sprinkle remaining flour over the top and cubed butter. Place baking paper over the top and then cover with foil. Place in oven for 3hours.


For the mash boil potatoes in salted water until soft. Strain and mash. Heat cream and butter in a small pan until butter is completely melted and add slowly to mash until combined. Cover and keep warm Blanch Carrots in boiling water for 2mins. Strain and place in a hot pan with 1tbsp of butter and 1 tbsp olive oil, cook until slightly coloured then add honey. Remove and place on plates with mash, a shank and a small amount of sauce.
