Sticky Lamb Ribs Recipe

A recipe from our chef mates Nathan and Eileen Booth at Burnt Ends Smoking Co. It's one of our favourite spots in Margaret River so we were thrilled when they agreed to create some homestyle recipes to go with our lamb boxes.


Serves 4






Ingredients


2 x 800g racks of lamb ribs

100 ml olive oil

2 tbsp smoked paprika

1 tbsp cracked pepper

1 tbsp salt


Guindilla glaze (makes 400ml)

400g sugar

200ml chilli pickle from guindilla

200ml water

2 red chillies

200g guindilla

70g mint

1 lime zest and juice


Method


To make guindilla glaze place all ingredients except for mint and lime into a pot. Bring to the boil and reduce to medium heat. Cook until liquid reduces by 1/3. Let cool.


Once cooled add lime and mint and blend well. (It will keep for 4-6 weeks in an airtight container in the refrigerator).


Preheat oven to 140 degrees.


Remove membrane or flap from the bony side of the lamb ribs with a sharp knife.


Mix olive oil, paprika, pepper and salt to forma paste and rub on both sides of the lamb ribs. Allow to marinade for at least1 hour.


Place ribs on a lined tray and cover with foil.Place in the oven and roast for 2 hours. Once tender remove from the oven and allow to cool completely.


Preheat oven to 180 degrees. Once the lamb ribs have cooled cut into individual ribs and place on a rack with a tray underneath to catch fat. Baste with glaze on top of the ribs and roast for 10-15mins.


Remove and serve with a little extra drizzle of glaze, fresh mint and lemon.
