Dukkah Lamb Rack Recipe

Delicious and so easy. I recently came across a beautifully spiced dukkah by The Pickled Wife in nearby Manjimup. I’m a big believer that if you can buy something local and handmade it's always going to taste so much better.






Ingredients


1 Marybrook Premium Produce rack of lamb

Olive Oil

Dukkah



Method


Using a roasting pan place the lamb rack into the pan before getting liberal with the dukkah. Rub the back of the rack with olive oil first and then press dukkah onto the back of the rack using your hand. Place it into a preheated 230C oven for 20 minutes and then turn down to 180C and cook for 1 hour. Leave it to rest before carving and serving with a fresh green or Middle Eastern style salad.
